I met a uncle on the Thanksgiving day. He does not believe there is God. I avoid arguing with him as I don't think I am well equipped. His questions are:
1. He won't believe in God until he can see Him.
2. If there is God, he wants to win lotto next week and he will build a church for Him.
3. Bible is not true as it is merely a book written by man.
How would you talk with a person like this?

First of all I don't think he is serious on discussing the question with you. Anyway he is my answer:
1. You see him everyday, look at all the creature around.
2. He has won a lotto already. Life itself is bigger than anything. Also I don't think God really need any church. Church is us to serve him.
3. He gotta read it to believe it.
I used to have similiar thinking as your uncle. We want God to prove himself in our way. But if we belive we were created, our prespective to approch God will be different.
